Serves: 4 Prep: 10min |Cook: 5min |Total: 15min
- 1 pound ground turkey
- 1/4 cup minced red onion plus 4 thin slices red onion
- 3 tablespoons minced chipotle peppers in adobo
- coarse salt and black pepper
- 1 tablespoon extra-virgin olive oil
- 4 ounces sliced pepper Jack cheese
- 1 small kirby cucumber, very thinly sliced
- 4 soft whole wheat buns, split
- 1/4 cup plain greek yogurt
- 2 pickled jalapeno peppers, seeded and sliced into strips
- 1 avocado, thinly sliced
Directions
1.
In a bowl, combine the turkey, minced onion, and chipotles. Shape into 4 patties, each 3/4 inch thick. Season with salt and pepper to taste.
2.
Preheat the grill to medium-high. Brush the burgers with the oil, and grill 4 to 6 inches from the heat for 5 minutes. Flip the burgers and top with the cheese. Grill for 5 more minutes, or until the burgers are cooked through.
3.
To assemble the burgers, pile one-fourth of the cucumbers on each bottom bun. Add a burger, followed by a tablespoon of yogurt, one-fourth of the jalapeno peppers, a few avocado slices, and a red onion slice.
